COLORADO SPRINGS, Colo. (KKTV) - A woman toting around a giant inflatable turkey across Colorado Springs has been challenging the public to try to go vegan this Thanksgiving.
Jessica Lifford is trying to spread the message "gobble veggies, not turkeys." As the turkey makes the trek across the city, Lifford says vegan eating is on the rise and it is likely families today will have at least one vegan or vegetarian at the table.
Lifford adds there are many holiday dishes that can easily be made vegan with simple substitutions. She recommends almond or soy milk is a good substitution for cow's milk. She points out there are a number of vegan roasts available at local stores along with tofu dishes.
