Basic Aioli



6 Cloves of Garlic
1 Tablespoon Fresh Lemon Juice
2 Egg Yolks
Salt (To Taste)
2 Cups Extra Virgin Olive Oil


1) Combine garlic, lemon juice, egg yolks, and 1 Tablespoon ice water in bowl of food processor, and process until the mixture is pureed and thick.
2) While food processor is running, add a pinch of salt through the feeding tube. Slowly drizzle in the EVOO. If the aioli begins to look oily, add a tough more of ice water. Color of the aioli should be a pale yellow, with matte texture. (Not Glossy)
