Vanilla Bean Cheesecake



1 ¼ c graham cracker crumbs
3 Tablespoons sugar
¼ lb melted butter

1 ½ lb cream cheese, soft
¾ c sugar
1 teaspoon lemon zest
1 vanilla bean, scraped
1 ½ Tablespoons cornstarch
1 Tablespoon vanilla extract
2 eggs
½ cup sour cream


Cream the cream cheese, sugar, vanilla bean, and lemon zest until mixed well. Add in the cornstarch, mix. Combine the eggs and vanilla in a separate bowl or measuring cup, slowly add 1 egg at a time into the cheesecake mix, scrape down the bowl and continue mixing. Add in the sour cream, mix until everything is combined. Pour into the cake pan, bake the cheesecake in a water bath covered with foil for about 2 hours at 300 Degrees F.
