Grilled Chicken with Roma Tomato sauce



6ea 6oz Boneless Skinless Chicken Breast (grilled)
1lb Fresh Fettuccini (cooked)
6EA Roma Tomato (Small Dice)
½ C Black Olives (Sliced)
2 Shallots (Small Dice)
2 Garlic Crushed Cloves
4oz Pepper Vodka
4oz Olive Oil
4tbs Butter


In a 12 inch sauté pan heat oil over medium heat, when oil is hot add the garlic, shallots, tomatoes and cook till the tomatoes start to break down then add the olives and bring to a simmer. Turn up the heat and add the Vodka. The Vodka will catch fire so be very careful not to burn yourself, after the flame goes out add the butter and toss till the butter melts. Cut the grilled chicken and serve over fresh pasta. Finish with fresh grated parmesan cheese.
