4 8oz Airline chicken breasts
1/2 cup Olive oil
4 Ham slices
4 Slices Swiss cheese
4oz Bleu Cheese
2 c Chicken stock
Salt and Pepper to season with
Lay out the chicken breasts skin side down, make a slit in the breast just below the wing making sure not to curt all the way through the meat.
Take the ham and layer the swiss and blue cheese, roll into a tube. Stuff the ham and cheese tube into the slit in the chicken.
Preheat oven to 375
Heat olive oil in large sauté pan over medium-high heat.
When the oil is hot, season both sides of the chicken breasts with salt and pepper then place in pan. Sauté the chicken over medium heat until lightly browned on both sides then add the stock and place in the oven for 15 minutes. Transfer the chicken to a warm plate and Let the chicken rest for 8-10 minutes.
Serve with your favorite starch and vegetables.
