Brioche Rolls



½ c hot water
½ c warm milk
1 oz dry yeast
½ c sugar
8 eggs
½ lb soft butter
2 teaspoons salt
2 ½ flour


Combine hot water, milk, yeast, and half the amount of sugar in a bowl, let the yeast bloom and get bubbly. Separately, put the flour, salt, butter, and other half of the sugar in a bowl. When the yeast is bubbly, put the flour mixture in with the yeast and the eggs, mix with the dough hook attachment until a solid ball forms.
Measure out 2 oz balls, set the balls on a sheet pan lined with parchment paper, spray with pan spray, cover with plastic wrap and sit out (preferably in a warm area) until the balls get bigger and spring back when lightly touched (about 20 minutes depending on surrounding temperature).
Brush the tops of the balls with melted butter and bake 350 Degrees F until golden brown.
