Boar Quiche



3 C Scrambled eggs (approx. 12 eggs)
1 C Heavy cream
Egg whites, optional
½ Lb. Boar bacon
¾ C Onions, medium diced, sautéed and cooled
¼ Lb. Spinach, chopped
¾ Lb. Guyure cheese
¾ tsp Dry mustard
1 ½ tsp Old Bay seasoning
¾ tsp White pepper, ground


Using lightly whipped egg whites paint crusts

Preheat oven to 370
Put crusts in the oven
Lower oven temp to 350 and par bake crust 5 min

Cut boar bacon on slicer to cut in to medium dice and cook in the oven (350) for15-20 min. Pulse in food processer until shredded
Put veggies, meats, and cheese in
Pour liquid mixture over dry ingredients. Mix together in shells so that veggies and meat are dispersed evenly.
Bake at 300 on bottom rack of oven for 25 min
Rotate, and bake 30 min more or until center of quiche is set
Insert toothpick in center to check for doneness (should come out clean)
Bake additional 3-5 min if necessary
Cool on counter for 15 min
Refrigerate 20 min. before cutting

Serve and enjoy.
