My Favorite Pie

The Salvation Army is asking for pie donations..that got us thinking about favorites.

MY FAVORITE PIE

I just did a little survey in the newsroom  I asked everyone to name their favorite kind of pie.

Shannon - something called Bumbleberry.

Brian - Chocolate Cream

Todd (photographer) Sugar Cream Pie

Rick  (reporter)  Pumpkin

McKenzie (reporter) Strawberry

Now, I don't bake pies.  It would be a disaster if I tried.  I can certainly eat my share of pie (maybe a a share-and-a-half.)   Everyone thinks their mother or grandmother or aunt makes the best pie. I can tell you the best pie I've ever tasted by far, is my Mother's chocolate cream pie.  I think she got it from her mother or grandmother or aunt.  The consistency and texture of the filling is perfect and I've never had any other chocolate pie that even comes close (I've tried many) I hope we'll have some Thursday at Mom's house!

Mom says the secret is the double boiler (whatever that is) and that it's kind of a practice-makes-perfect recipe.  Mom agreed to give it up, so here it is.  Give it a try.......practice makes perfect....pie.

(Mom's) Chocolate Cream Pie

1 cup sugar

1/3 cup all purpose flour

1/4 tsp salt

2 cups milk

3 slightly beaten egg yolks

2 tablespoons butter or margarine

1 teaspoon vanilla

2 unsweetened 1ounce squares of baking chocolate

1  9-inch baked pastry shell

In double boiler top sauce pan combine sugar, flour, and salt.   Gradually stir in milk and melted chocolate squares. Cook and stir over medium heat till mixture thickens. Stir small amount of hot mixture into yolks, return to hot mixture.  Cook 2 minutes, stirring constantly. Remove from heat, add butter and vanilla. Pour into the baked pie shell. Put saran wrap on top to avoid a crust from forming. Refrigerate.  Serve cold, topped with whipped cream.

If you can donate a store-bought pie or two to the Salvation Army, here's the info from their news release.

As you prepare for your own Thanksgiving feast, The Salvation Army is asking you make or buy an extra pie for those having dinner at their Community Holiday Dinners Thanksgiving Day.

 

The organization is in need of about 800 pies to feed thousands at the annual event, held at six locations around El Paso County.

 

Pies can be brought to 908 Yuma street in Colorado Springs Tuesday and Wednesday from 8:00 a.m. to 4:00 p.m.  Please call ahead if you have a large amount to donate.  For more, call 636-5266.
